It’s Great when it’s Great

I’m guessing there aren’t too many of us out there who haven’t been through a luncheon or buffet line that has imposed a version of Chicken Salad that made you wish you weren’t hungry, -convincing you right quick, that you really weren’t! That being said, this recipe is one that sorta happened out of desperation. I needed a salad recipe I could be confident to serve to guests because Chicken Salad is great when it’s great! So I carefully crafted this one.

Chicken Salad at its Best

Chicken Salad at it’s best is equally suitable for parties as for school lunches. This recipe uses freshly cooked and chunked chicken rather than shredded bits.  Secondly, the recipe calls for crisp produce and fresh herbs. It all comes together quickly and easily with a light amount of seasoned dressing, such that it enhances individual flavors rather than cloaking them. Suddenly you have a delightfully hearty, fresh and delicious salad to serve. I’m sure your family and guests will love it!

Grammie's Best Chicken Salad
Comfort food at it's best! This Chicken Salad has never failed to bring compliments and requests for the recipe. Easy and quick. Equally great for parties and school lunches.

Instructions
  1. Gather ingredients and a large bowl.
  2. Prepare each ingredient as listed, chopping Shallot, Chives, and stemmed Thyme,
  3. Rinse and chop Celery. Rinse Red Grapes and slice in half.
  4. Skin and debone Rotisserie Chicken. Chop meat into chunky bite-sized pieces (approximately one inch). Add first six ingredients together into the large bowl and gently toss with a rubber spatula.
  5. Add Salt, Pepper and Mrs. Dash seasoning.
  6. Add Mayo and Sour Cream. Gently fold all ingredients together. Adjust seasonings to taste, if desired.
  7. Serve chilled Chicken Salad on a Croissant Roll with Butter Leaf Lettuce (as pictured), Sandwich Bread or simply on a bed of fresh Lettuce. Enjoy!
