Shepherd's Pie
Comfort food at it's best! The thing about Shepherds Pie is, it's a tasty way to use up what you have on hand. I tend to craft it a bit more but you don't need to. Follow the general recipe in equal amounts and you'll soon create your own

Ingredients
Potato Topping
- 2 pounds Yukon Gold Rinsed and trimmed.
- 1/3 cup Half and Half
- 2 Sprigs Fresh Rosemary
- 3 ounces Butter
- 3/4 teaspoon Kosher Salt
- 1/4 teaspoon Ground Black Pepper
- 2 Egg Yolks separated. Use egg whites in another recipe.
Meat And Veggie Filling
- 2 Tablespoons Avocado Oil
- 1 whole Onion Peeled and diced small
- 2 whole Fresh Carrots Peeled and diced small
- 2 cloves Fresh Garlic Peeled and minced
- 1 pound Lean Ground Beef
- 1 pound Ground Pork
- 1 pound chub Sagey Breakfast Sausage
- 1 1/2 teaspoons Kosher Salt
- 1/2 teaspoon Ground Black Pepper
- 1 pinch Red Pepper Flakes
- 2 Tablespoons All-Purpose Flour
- 1 Diced Tomatoes use the juice
- 2 Tablespoons Worcestershire Sauce
- 1 teaspoon Thyme
- 1/2 cup Fresh or Frozen Cut Corn
- 1/2 cup Petite Peas
