It’s Salad Time
Stache loves a great dinner salad. I mean like, a HUGE plate of salad for dinner. He loves them so much, if I let too many weeks go by without a huge salad, I’ll find him in the kitchen on one of his days off, making us both one for lunch. The man never complains about such things. But as you might have guessed, no doubt, I periodically plan dinner plate salads.
Hearty, Meaty, Wholesome
This recipe is nothing less than delicious. When the young men in your life brighten up at the mention of a particular salad, you know you’ve got a great thing goin’. Burger Picnic Salad is just that! Hearty, meaty, wholesome, and delicious. I hope you’ll give it a try! Typing this out for you all, I think it’s about due time for us to have it on our menu again this next week. In fact, it’s a perfect meal for a Labor Day celebration!
Old Fashioned Goodness!
With everything all about Ranch, you don’t see Thousand Island dressing as much these days, as we used to. Some have labeled it “old fashioned.” I can’t imagine why?! After researching its legend origins and dramatically expanding my girlhood recipe of simply mayo, ketchup, and pickle relish, I gotta say, -we’ve been missing out! Old fashioned or no, this version of Thousand Island is… well, it’s decidedly fantastic!!
Of course, quality makes all the difference. The best beef your budget affords, thick cut bacon, real mayonnaise (I can’t vouch for spreads and dressings), excellent pickles, excellent cheese (as opposed to processed cheese food), garden tomatoes, fresh sweet corn, and lots of love. You see? It’s gonna be great!

Burger Picnic Salad
Ingredients
Beef Burger Patties
- 2 pounds Ground Beef 90/10
- 1/2 Red Onion diced medium
- 4 Tablespoons Butter
- 6-8 shakes Worcestershire sauce
- 1/4 tsp Granulated Garlic
- Sea Salt to taste
- Ground Black Pepper to taste
Home-style Thousand Island Dressing
- 1 1/4 cup Hellman's or Best Foods Real Mayonnaise Original or Olive Oil recipe
- 1/2 cup Ketchup
- 2 pinches Granulated Garlic
- 3-4 pinches Smoked Paprika
- 2 pinches Sea Salt to taste
- 1/8 teaspoon Ground Pepper to taste
- 1/2 tiny pinch Cayenne Pepper (optional)
- 1 whole Boiled Egg fork mashed, to nearly smooth
- 3 heaping Tablespoon Bread and Butter Pickles rough chopped
- 1 Shallot minced
Salad Ingredience
- 1-2 heads Butter Leaf Lettuce rinsed, spun, and torn
- 1-2 heads Baby Red Leaf and/or other Baby Lettuces rinsed, spun, and torn
- 3-4 whole, medium sized Fresh Tomatoes rinsed, cored and diced chunky
- 3 large cobs Fresh Corn blanched and cut from the cob
- 4 large Fresh Carrots rinsed, peeled, quartered, and chopped to small bite size
- 1/2 medium Red Onion thinly slivered
- 1 pound Thick Cut Apple Wood Bacon cooked, drained, and rough chopped
- 8-12 ounces Sharp Cheddar Cheese grated
- 1 jar Dill Pickle Spears
Instructions

Gather and prepare ingredients as listed above for the Dressing, Burgers, and Salad. Set Salad ingredients aside until ready for assembly. In a large heavy skillet, add butter and diced red onion. Saute slowly until caramelized. Set aside cooked onion, cooling to room temperature. Pour remaining browned butter out of the skillet and save.

In a bowl or large measuring dish, add mayonnaise, ketchup, granulated garlic, smoked paprika, salt, pepper, cayenne (if desired), Bread and Butter pickles, fork mashed egg, and minced shallot. Mix well together and set aside until ready to serve.

In a separate bowl, mix together the ground beef, caramelized onion,, Worcestershire sauce, granulated garlic, salt, and pepper. Add a tablespoon of reserved brown butter, left over from cooking onions. Mix well together. Divide the seasoned beef into eight equal portions. Hand shape into patties well pressed together with a divot pressed in the center.

With a touch of pan-spray added to the same heavy skillet, heat skillet to medium high and add burgers. Turn heat down to medium and cook burgers, about 4 minutes per side. Test for your desired doneness. Remove from heat and set aside while plating your salads.

Layer approximately two to three handfuls of prepared lettuce on each dinner plate. Lay two dill pickle spears on two sides of the plate. Add as desired the cut tomatoes, corn, cut carrots slivered red onion, cooked and chopped bacon and grated sharp cheddar cheese.

Drizzle the Thousand Island Dressing over the salad to taste. Add a Burger Pattie (Stache and my grown sons take two!). Add a touch more dressing on top of the burger, and WOW! That's a truly great salad!
